I made these awesome cupcakes for a St. Patty's Day party a few years back. They were a big hit, so I thought I would share.
Cupcakes
You can use you favorite vanilla or chocolate box cake mix. Follow instructions on the box, and substitute water for Bailey's Irish Cream.
Bailey's Butter Cream
2 sticks of butter room temperature
3 Cups confectionery sugar
2 tbs of Bailey's Irish Cream
Chocolate Butter Cream
2 sticks of butter room temperature
3/4 cup unsweetened cocoa powder
2 1/2 cups of confectionery sugar
Cream butter on medium speeds gradually add Bailey's, sugar and/or cocoa powder to the mix. Less sugar can be added to taste and for desired consistency. For a stiffer frosting add more sugar. If chocolate frosting is too stiff you can add 1-2 tbs of milk.
Assembly: First pipe a circle of chocolate butter cream. Top with a smaller circle of Bailey's Butter Cream. Add a decorative green shot glass (found in you locate party store, dollar store or online). Fill shot glass with Bailey's Irish Cream...or chocolate mike for the little ones!
