I found these adorable cupcakes on makeandtakes.com. I have done the rainbow cake thing before and it's a little time consuming, but so worth it when you see the reaction. Disney Family Fun has detailed instruction on how to do it.
Tip: Divide cake mix into small zip top sandwich bags and add food coloring to them, zip and mix. Once the colors have been mixed you can snip the corner of the bag to fill the layers of the cupcakes. Less mess and clean up!
